Peggy’s Favorite Quinoa Salad

Although I say this is my favorite salad, it is not my husbands. He is a total meat and potatoes type of guy.

Rinsing Quinona: Buy it from the Whole Foods Coop.  Rinse it 3 times.  You have to have clean hands because you mix it in the water with your hands, drain it carefully, so it doesn’t all come out of the pan. Once it has been rinsed 3 times, add water and cook until tender. I like to say until there is like a little string growing out of it. Drain carefully.

Chopping Up the Mix: I could add corn, frozen works, cut up cumbers, chopped tomatoes, chopped Cilantro (I love lots.), chopped or rather minced garlic.

Mix all of the above together. Then add olive oil, lemon juice, lime juice, cumin, and sea salt.

If you like raisins add them.

Mix. Chill. Serve.
