Spicy Quinoa

Spicy Quinoa, Son’s Recipe

2 T. of vegetable oil

1 c. of uncooked Quinoa

1 medium chopped onion

1 clove of garlic or 1 T. of minced garlic

Salsa as desired

chopped carrot

chopped Romaine

1/4 t./ garlic powder

1 T. chili powder

1/4 t. ground cumin

2 1/2 c. of water


Heat oil in sauce pan and stir in Guinoa, onion, garlic chopped carrot. Cook until tender and Quinoa is lightly roasted. Add the salsa and 2 1/3 c. of water. Add all seasons. Bring to a boil, reduce heat to medium or lower and simmer until the Quinoa is tender. This is about 30 minutes before serving.
