Irish Food/Colcannon

I am all filled up from an Irish meal. Oh,  my gosh, too much food.

Some years I have made soda bread. Not this year; I am not that crazy about it.

Colcannon Potatoes

This is cabbage, water, potatoes, milk, chopped onions, butter, crumbled bacon and some minced fresh parsley.

You boil the cabbage, drain, chop up.

Then you cook your potatoes after peeling them and quartering them. Drain.

In a saucepan  you bring the milk to a boil, then remove it from the heat.

Add milk to the mashed potatoes, beat in the cabbage, salt and pepper.

Add melted butter, bacon and parsley. It serves about 12 people.

 

I think I have eaten too much cabbage.
